Are your wines natural?

We don't like to define our wines using rigid labels or categories. However, the term that most closely aligns with our approach today is probably "natural wine".

We are not organically or biodynamically certified, even though our approach in the vineyard goes beyond conventional organic practices and closely resembles regenerative viticulture and biodynamics.

In the fields, we exclusively use copper, sulfur, and fermented plant-based preparations. A large part of the work is done manually, from pruning to hand-harvesting into crates.

In the cellar, all fermentations are spontaneous, the wines are not filtered, and sulfur dioxide is only added if necessary, just before bottling. In some wines, it is not added at all.

Every bottle is born from a simple idea: to intervene as little as possible, guiding the wine without forcing it, to preserve its vitality, identity, and energy.

Who is behind Indomiti?

Indomiti is the brainchild of Simone Ambrosini, a small artisan producer in the Berici Hills.

Each bottle is the result of manual agricultural work, continuous research, and a vision that intertwines wine, rural life, and personal growth.

Indomiti aims to be more than just a winemaking project; it's an authentic way of inhabiting the land, respecting its rhythms, limitations, and vitality.

Behind every wine lie seasons, insights, mistakes, attempts, toil, and true beauty. This is precisely why each bottle tells a story that is alive, sincere, and unique.

How do you recommend we taste your wines?

We advise not to serve wines too cold, so that their aromas, energy, and depth can express themselves fully. However, even red wines can be pleasantly drunk chilled, especially in warmer months: Tai Rosso, in particular, lends itself very well to a lower temperature than traditional red wines.

Our winemaking philosophy seeks lively, vertical, and dynamic wines, more oriented towards drinkability and energy than excessive structure or concentration.

Before tasting, we simply recommend letting the wine breathe calmly in the glass, without aggressive aeration. These wines tend to open up slowly, revealing themselves over time.

The glass can also make a difference: we prefer universal or narrower glasses, often perfect for accompanying the entire range, from sparkling to red wines.

However, the most important advice remains one: slow down. Drink with presence, curiosity, and patience, allowing the wine to evolve and change throughout the evening.

Can wines have sediment at the bottom?

Yes, it can happen.

Indomiti wines are not filtered and undergo minimal intervention in the cellar, which is why some bottles may show a slight natural sediment at the bottom. This is a sign of the wine's vitality, not a defect.

Even the color, aromas, and energy can evolve slightly from bottle to bottle or between different vintages: this is part of the authenticity of an artisan wine, alive and not standardized.

How to store your wines?

We recommend storing the bottles in a dark place, away from heat sources, sudden temperature changes, and vibrations, ideally at a cool and constant temperature.

However, Indomiti wines are already ready to drink right away, lively, vibrant, and full of energy. Over time, they can evolve and develop new nuances, but the main advice remains simple: uncork them, share them, and let their vitality flow through you.

Can I create a mixed crate?

Yes, you can freely compose your selection by choosing the bottles you prefer.
If, however, you would like a pre-designed path to discover the world of Indomiti, we have also created a tasting box with some of the most classic and representative wines of the Indomiti project.

How does shipping work?

Shipping costs €11.90 and is free for orders over €89.

Orders are generally prepared and shipped within 3–5 business days.

Bottles are packed in protective wine cases certified for glass transport, designed to ensure safety during transit.

For safer, more sustainable, and optimized shipping, we recommend purchasing cases of 6 bottles or multiples of 3 whenever possible.
